Tarte de Amendoa Algarvia (Algarve Almond Cake)

A typical Algarve salad is based on mediteranean salads. Eggs are optional, and prawns or other shellfish can be added.

Ingredients:

Tarte de Amendoa Algarvia

A traditional Algarve cake made with mixed nuts 10 eggs
350g sugar
250g frutos secos (ground nuts) e.g. almonds, walnuts, hazelnuts
1 table spoon flour
1 tea spoon cinnamon
Grated lemon rind of 1 lemon
1 Greaseproof paper Butter to grease the tin

Put the eggs, sugar, grounds nuts, flour, lemon rind and cinnamon in a large bowl and mix thoroughly. Put butter around the baking tray and place the greaseproof paper inside the tray on the butter. Place in oven for 35 minutes or more (check regularly).

When cooked serve on a plate and sprinkle with icing sugar. In the Algarve "Frutos secos" refers to nuts rather than dried fruits.
