Pineapple Sponge Cake
Pineapple Sponge is a traditional Algarve cake which is baked by Portuguese families. The recipe consists of a soft sponge, layered with pineapple and coated in caramel.
4 tablespoons of sugar
2 tablespoons of butter at room
2 tablespoons of milk
6 tablespoons of flour
1 teaspoon of baking powder
1 tin of pineapple
100g sugar (for making the caramel )
Pre-heat oven to 180-200 degrees. Whisk the sugar with the butter and add the eggs one at a time mixing with the whisk until fluffy. Add the milk and whisk for 2/3 minutes. Mix the flour with the baking powder and add to the mixture and whisk for at least another 5 minutes.
Cut the pineapple into small pieces and add to the mixture gently. Place the mixture in a round cake tray (ideally in Portugal we would use a forma de bolo) which has been coated with caramel and cook in the oven for 30 minutes. Turn off the oven and take the cake out. After 15 minutes, place on a plate and allow to cool.
Make your caramel using sugar without water. Don't open the oven during cooking.
